1) Presentation of vinyard :The vinyard is located on 4 villages which cultivated the 10 appellations of domain.
2) The crop establishment :The crop establishment are traditional with a specific approach for each vine in function of its orientation, its age, its colour… The ploughing allows to maintenance the vine and contains the developement of undesrible flora to increase the microbial life in the soil. So the features of the soil are preserved. The chemical weed control are stopped on the domain since 1995. A diversified flora is installed to the vine. The manual work is very present in the vines, it allows to get good grapes with a optimal maturity. All the years, the disbudding is prescribed except in the cold zones. We use a lifting and thinning out of leaves to increase the quality of speaying and to ventilate the plant, it allows to avoid the rotting. The thinning out decrease the weight on the vine and allows to grapes to have a good evolution of the ripening and a regulary evolution from the optimal ripening of grape. The harvesting is manual with a first sorting in the vine by the grape picker. The grapes harvested in box (25 kg) are brought in fermented room and are poured out on sorting table to eliminate the corrupted parts. |
